For a good start to winter, we suggest you the recipe for a
good quince jelly to make at home.
Quince jelly
INGREDIENTS :
For about 800 g of jelly (Approximately)
-1.3 kg of quinces
-water (enough to cover the quinces in the pan)

This quantity gives about 5dl of juice to which you will have to add :
-350g of sugar
-1/2 tablespoon lemon juice
Adjust the proportions according to the amount of juice obtained.
PREPARATION :
STEP 1 :
Wash the quinces under running water to remove the down by scrubbing with a brush or a clean cloth.
STEP 2:
Once the quinces are well cleaned we can start the recipe.
STEP 3:
Cut the fruit in 4 and cover with water in a large pot. Then leave to cook for about 45 min and let it cool and rest for 24 hours so that the water takes on the taste of the quinces and the pectin of the fruit. (Which is used to jelly)
STEP 4 :
Filter with cheesecloth or gauze. Do not squeeze to keep the jelly clear.
STEP 5 :
Pour the quince juice into a saucepan, add the sugar and lemon and bring to the boil, then lower the heat. Skim if necessary. Cook over low heat about 20 min with occasional stirring. To see if the jelly has set, place a large drop of jelly on a plate and let it cool down. If the jelly is no longer completely liquid, the cooking may be stopped.
Pour the jelly almost to the rim of the clean jars rinsed in boiling water and immediately close the lid.
Allow to cool.

At what time of the year does the quince harvest take place?
Quince is the fruit of the quince tree native to Iran and the Caucasus. Yellow in colour, it requires cooking before it can be consumed. It is harvested as late as possible, between October and November.
To know if the quince is ripe, simply observe its colour, which must be a beautiful golden yellow, and gently rub the down which should be easily removed. It can also be harvested before the end of the season if you wish to store it in a rack.

Quince paste can be kept for 2 months in a cool place away from light and humidity or in the refrigerator, as for jams and other jellies if the jar has been properly sterilized they will keep for several years.
